Wraps area fantastic way of using up leftovers. I had a big family barbecue the weekend before I made this lunch and therefore had all sorts of odd bits leftover. The sausages went towards a Monday night dinner with salad, the burgers broken up to make meatballs with a tomato sauce and I shredded up the chicken to use for lunches. If you don’t have leftovers to use up, it’s often a good idea to grill a chicken breast or two at the beginning of the week to use in salads, sandwiches and wraps for lunches throughout the week. I added a handful of grated cheese for a bit more flavour and voila! Easy peasy leftover lunch.
Ingredients
1 wholemeal tortilla wrap
handful lettuce
6(ish) slices cucumber
1/4 cooked chicken breast, sliced
small handful grated cheddar cheese
1tbsp hummus
