Antipasti Salad

This is a really quick and easy lunch that takes five minutes to throw together and despite the fact that it’s ‘just a salad’ is absolutely jam packed full of flavour. I’ve called it an antipasti salad as it contains a few ingredients you wouldn’t be surprised to find on an Italian antipasti platter. The mozzarella, pepperoni and sun dried tomatoes definitely give an Italian edge to this lunchtime meal. No need to bother with knocking up fancy dressings either, just use a tiny bit of oil from the jar of sun dried tomatoes which is already infused with delicious flavour. That and a sprinkling of pine nuts on top for a bit of crunch and you’re done!
Handful rocket
6 slices cucumber, cut into half moons
1/2 small mozzarella ball, torn
4 slices pepperoni
3 cherry tomatoes, halved
1 large sun dried tomato, sliced into strips
sprinkling of line nuts
2 thin slices red onion
1/2 tbsp oil from the sun dried tomatoes
