Leftovers make great packed lunches and often make slightly too much for dinner just to make sure I have some leftover for lunch. When I make a Spanish Tortilla I’m probably looking forward to tomorrow’s lunch even more than dinner! You could also make one of these at the beginning of the week and it’ll last five days in the fridge so you can have a slice in your lunchbox every day.
