Bean & Potato Salad Lunchbox

So I’ve finally gotten over my seafood phase and we’ve just got a pure veggie lunchbox this week. This was actually leftover from dinner the night before, where I’d had a selection of salads, dips and some smoked mackerel. I probably would have put some of the mackerel in with this lunch but we’d used it all up. Leftovers often make great lunchboxes and it’s pretty easy to add things to them or mix them up a bit to make it feel like a different meal.
Ingredients
Salad:
potatoes
tinned canellini beans
fresh runner beans
red onion
basil
cherry tomatoes
cucumber
Dressing:
wholegrain mustard
olive oil
balsamic vinegar
white wine vinegar
crushed garlic
On the side/extras:
brazil nuts
blueberries
